I'm new to WH40K, and I'd like to know which Legion/Chapter I should play before I buy the paints. I've already bought the minis. Also, I've already ruled out the Sons of Guilliman.

You should play Cacharadons. They have a fun grey color scheme and as a renegade chapter, you can plug in random 30K figures into your army while still being lore accurate.
