Dungeons are a stalling tactic against adventurers at best. It might take a while for a sufficiently powerful one to come along to best the dungeon, but the fact that it IS a monster infested dungeon means that it will inherently attract adventurers to it in the first place. And chances are good that you had to use the same magics you are good at to create and populate the dungeon in the first place (you would, after all, want to make the dungeon as powerful as possible). That means by the time they reach you, everything they have fought has been within your wheelhouse, meaning that any adventurer that can best the dungeon has basically been training to fight you the whole time.

It might take a hundred years for anyone dangerous enough to reach you to pop up, but you are a lich A hundred years a is supposed to be a drop in the bucket to you now.

If you want to not get mobbed by adventurers and heroes, don't advertise yourself like with a dungeon. Hide in plain sight, keep your head down, and present a public face that is useful to common adventurers so only the dick ass thief has any reason to mess with you, the sort of person that if you blow away not a lot of people will actually be that upset about.

Besides, Wiz knows for a fact she isn't the biggest fish in this pond. That's the demon king. So there isn't anything to gain from trying to be the BBEG, that position is already filled. She could, at best, be one of the demon kings top generals. Which is a lot of work and attracts high level heroes to you like flies.

Enough adventurers to protect her from attacks by forces from the BBEG, but weak enough that she could probably fight her way out if she suddenly had to. She also does a lot to ingratiate herself to most of the local heroes in the form of magic item selling, identification, and occasionally helping the town out with certain threats. Which builds up enough good cred that even the people who find out her secret are not strongly incentivized to attack her.

It might not be a 100% ideal situation, but its a nice sweet spot to lay low in.

Well, you have to be a real evil bastard to become a lich by DnD rules, because the process is incredibly vile and only those of the darkest hearts could ever see it through.

Granted, this doesn't mean you have to go on a mass murder spree afterwards. It just means you are willing to do anything to survive, no matter how despicable.

In theory, if you could figure out another way to achieve the same end you don't even NEED to be evil to achieve something akin to lichdom. That said, its doubtful anyone would ever believe that you achieved lichdom by perfectly neutral means. Yeah, I tend to play that there are other ways to achieve immortality, because I like the idea of having ancient corpses in my setting that aren't necessary baby-eaters. The common thread, though, would be that they're all extremely involved, complex, and hard to pull off, as well as generally kind of unorthodox and more than a bit squicky most of the time. Becoming immortal is one of those things that takes a lot of magical mojo and a lot of know how and which can go REAL bad REAL fast if you fail to dot all your i's and cross all your t's.

The "stardard" lich thing, then, would be kind of the shortcut. You can spend decades of your life working an extremely complex ritual that can go boom if you make the slightest mistake... or you can set up the easy blood sacrifice ritual and bind a hundred human souls in eternal unspeakable torment for power and become a lich within three months. You know, your choice. It's not like you know all those people anyway, fuck'em, right?

I find it helps drive it into players how the common lich is an evil fucker. It removes the lack of options excuse. And it makes the ocassional good ancient dead spellcaster all the more feasible.

I like to imagine that Wiz used to be evil 500 years ago or so, with full on evil sorceress gettup and ojou laugh and they whole bit... but over time she just sort of mellowed out. Hmmm. It really does. The fact that other options exist and they still chose the one that was evil as fuck just because it was easier says a lot about them as a person.

AND you can do interesting stuff with it, like someone who is forced to use that form of lichdom because they simply don't have time for anything else. Like, imagine an elderly king whose sons are killed in battle leaving him without an heir, and the kingdom will implode into a power vacuum and civil war without him because all of his other options either have poor claim to the throne or are little shits.
Imagine that guy speaking to him court and knights, getting together the 100 most loyal followers of his kingdom and getting them to volunteer to make him the King Eternal for the good of the realm.

He could just as easily take 100 criminals from the dungeons and do the same, but in his wisdom he has decided that if he cannot convince 100 men to go into death in his death, he doesn't deserve eternal life anyway because the people do not love their king enough to keep him around forever.

Imagine the choices that kind of king would make after the ritual was completed. Knowing that you only still draw breath because 100 men trusted you to be the best king you could, every day, and they signed up to be tortured for eternity to give you that chance. The weight of those lives on your soul.
