Think like a stalker. What do they want? What's their fantasy world? Even though they're crazy, they obey the same rules of logic as most people, except that they [believe Beyonce will fall in love with them].

So then have them work towards that goal. They'll probably notice the PCs protecting this person, so it's only reasonable that they'd try to figure out ways to lure the PCs away.

Second, you can have things from the other side. Celebs who don't want the inconvenience of allowing the PCs to protect them properly. "Stay out of the basement" or "don't ever be in the same room as me."

Then find ways to make that complicated, either by having the stalker or a confederate get involved, or by having the ol' 'President's Daughter' routine that all the Disney live-action movies in the early 2000s did, where the VIP actively tries to escape and leave, which eventually opens them up to risks.

Other, less dangerous stalkers

get them second-guessing themselves. yeah, that smiley-face post-it in the singer's dressing room might've been from her producer, but it might also mean her stalker's been in there. make casual mention during an otherwise-routine drive somewhere of how heavy the traffic is, and how tall the buildings are, how many windows there are. the goal is to get them as paranoid as the celebrity is (or should be).

She's not supposed to know they're supposed to be protecting her. So there's a risk of them getting accused of stalking. Ideally by the celebrity or the stalker.

Also, they have people who are following them, who themselves are being followed by people following their followers.

The stalker starts randomly setting up traps in secret at places that she needs to go regularly, like the gym and such. The traps aren't meant to do anything other than appear dangerous, because he's trying to bait some of the group into camping places he might try to booby trap next. Then he makes a move when the group is smaller.

You could mix these two, the person who hires them is the stalker, he/she hires the PCs so he can set them up to look like stalkers, fight/kill them somehow, and then the object of his/her obsession will love him/her for saving them.

Even when identified, the stalker can't easily be brute-forced into stopping because of connections of their own.
