Mirrorshades was bearable by Adam's story-telling/world-building ability, and Wheat's interactions with Dodger and JP.

As far as I know, everything is run by Steven Lumpkin, Neal Erickson and Adam Koebel. I ordered them as how entertaining I think they are to watch, however they are all still worth watching in my opinion.
Most of the players are worth watching, with the following exceptions (that I know of, I haven't kept up to date with rollplay for a while):

Huge rules lawyer, but doesn't understand the rules. Usually complains until the DM gives in to his childish demands. Doesn't really get the concept of turn based combat it seems.
He also makes the same 2 characters every time It's either strong silent warrior type, or strong vocal warrior type. Not much else to say about his characters.

Jesus, where do I even start. All of her characters are mary sues. Not by the loose definitions that the internet is so fond of, but by anyone's standards. Take her character Freki, for example:

Don't get me wrong, I don't dislike the guy, but his role-playing habits annoy the fuck out of me probably due to my tastes alone.
For starters, he always plays female characters. I have no issue with crossplay, but it doesn't work very well over twitch/YouTube as you kind of assume the voice of the player matches the voice of the character.
The fact that he crossplays with every single character also leads me to believe that he may either be repressing his neurological gender or inserting his fetishes. I could be completely wrong though, I am not a psychologist.
Another issue I have with him is that he tries to do accents. He is not an actor and he sucks at accents. They get incredibly annoying and I don't understand how anyone could deal with it for several hours on end.
It's a shame because often he has interesting character concept, and he's not bad at role-playing, but those habits make him unbearable to me.

As for a specific series to watch, I like the idea of the West marches, but it does frequently feature Kaitlyn. Solum is good, but does feature Geoff. There's also a new star wars series and a viking themed one I have yet to watch.

Honestly, just go watch Critical Role on geek and sundry's channel. It is all done in person by professional voice actors, and all of their characters are well fleshed out. The only downside is that they have 8 or 9 players iirc, so it's a little chaotic. Still probably a lot better than most rollplay series.

It has Kaitly_n in one of the parties but she said like three words in total during her one session. And her character is a stock ninja guy, no frills.
