Yes, you will find some forms of lamellar, brig and plate reinforced maille, depending on what individual part of the middle east in question, obviously indicative of technological trade with their nearest neighbors. The ease of their armour seems to be that it rather stagnates and doesn't evolve much past the 13th-14thC.
I am also assuming you're using it for a larp and don't need to have 100% single point documentation

Specifically of wholly muscle-powered bows loaded, drawn, and fired entirely by hand and release? Biggest one I know of is the Japanese yumi, also known as a daikyu.

The Japanese Yumi is the largest I'm aware of that I know the specific context of. Often times they are made by binding multiple strips of bamboo, and are so large that they are held from a third of the way from the bottom instead of the center.
I remember my anthropology professor talking about a tribe that used bows that would basically fire atlatl darts by dropping onto their backs, holding the bow with their feet and pulling back the string with both hands, basically turning themselves into human ballistas.
I do not recall any identifying information on the peoples that did this, if anyone happens to know anything about this.

War elephants on a whole were not very good, outside of shock and awe, as they are too smart to really get stuck in and panic easily. That said, the elephant bow, much like the oversized swords and maces they made to be held in the trunk, were more for intimidation than anything. Lets face it, it worked.

On the topic of plated mail, I've been interested in japanese tatami (folding) armor. Might make some. I'll post examples, but I've also got a couple questions to go along with them.
Japanese mail is unique in that it's the only stuff that's butted, though most commonly it'll be a double or triple coil, and reinforced by being sewn in to a cloth backing. Is it strong enough for SCA kind of stuff?
Another unusual aspect is the weaving, using a mixture of regular round rings and oval rings linking together in a cross or hexagonal pattern. What's a good idea for something to wind the wire around to make the oval rings?
I'm having difficulty finding any reference to padding worn under this stuff, like an aketon equivalent. Closest I can find are Manju no wa, a pillow like thing worn on the shoulders and neck to make armor more comfortable. Any hints?

The Koreans apparently made some. But then again, paper pre-wood fibre pulp was closer to felt than what we'd think of as paper. It was made with a significant portion of recycled fabric fibers and other long plant fibers, which could result in a very tough final product.
