Blunt weapon types, holy damage type and focus on disabling movement so you can coupe de grace them at your leisure rather than battlefield destruction.
Tactics are trickier. They can attack in swarms, coordinated elite groups or single superhuman warriors. Funneling the prior two into killzones and trapping the latter is effective.
Removing the skull is not automatically lethal but is usually highly disruptive to the skeleton and massively weakens their combat potential.
Avoid fights if you can assassinate their summoner. Focus down the necromancer if possible.

Get a big fuckin' hammer, aim for the head and/or shoulders. Can't kill you so easily if they can't even hold a weapon.

Consider consecrating the site the skeletons are on. It may well weaken them, and if not then spending a couple minutes in prayer while sprinkling holy water isn't the worst failed experiment in the history of PCs.

By Souls logic that'd be the most useful of the weapons. Why does some games make skeletons weak against fire, they're 0% flammable. Then again, I guess it's mostly "Undead" being weak to fire and not making skeletons an exception.

The problem with the Riccohet in that hallway on the skeletons is that they love to bounce the long way instead and end up in a different hall. Not bad for the Ogres, but for the skeletons just that much faster to Gleam and Rivet.

Just keep in mind that they have no musculature, and are literally weaker than a toddler.
With that out of the way, improvise any weapon you have, be it a sword, magic staff, rapier, javelin, etc, and use it like a hammer. The skeleton should break apart.

If you have a sharp weapon like a sword it would probably just be most effective to swing the blunt/broad side at the skeletons. And if you're attacking with the non-sharp bits of a sword, a blunt weapon is simply better suited for it.
