In case of vampires and werewolves and the like, it's probably part of a supernatural curse. Vampires used to be mortals and gain immortality and power in exchange for having to feed on the blood of their former kind, while werewolves are cursed to turn into beasts and hunt their fellow men.

For a lot of other monsters it's simply because there's a lot of dumbass humans who wander into abandoned ruins and caves looking for treasure and get killed by monsters. Unlike a pretty much every other prey animal, humans willingly enter their lairs so they're a convinient source of food.

Yokai must eat human flesh, so they nab suicidally depressed people from the outside world and eat them because it's more ethical. Apparently it taste like shit though, since such people lack any will to live or do anything.
The sausage's she's eating from the first panel are from some guy who somehow unded up wandering into Gensokyo while looking for his wife (who was apparently one of the suicidally depressed people nabbed by the Yokai), and got killed by her.

Well, aside from the fact that many monsters may have special advantages that humans don't have, humans are really only dangerous as a group as long as they're not particularly skilled warriors.

A city full of civilians that can be lead off down dark alleyways or shut themselves up in flimsy wooden houses makes for easy prey. Even the actual guard can be overwhelmed one by one if need be, and frightened half to death.

Yeah, living in a city is actually a pretty good place for a monster, at least something like a vampire or succubus, that can pass as a human, or one that is stealthy enough to avoid notice. Constant supply of easy prey, the humans keep away any bigger and more aggressive monsters, and nobody is really going to notice if some beggar disappears or some random person turns up dead, and even if they do it'll probably get pinned on some human murderer.

Kind of like those butterflies that lay their eggs in anthills. The eggs and larva have pheromones that make them smell like ants, which fools the ants into not paying attention to them, letting them to eat ant eggs and larvae when they aren't looking while the ants keep any insects that would prey on the butterfly larvae from getting to them. In some cases the ants would even retrieve the larva and bring it back inside the anthill if researchers removed it and placed it outside.

Humans' one advantage, of course, is the advent of technology, which allows them to pervade most environments, making them significantly more common, meaning more monsters eat them.

"Realistically", any big nasty monsters with small numbers, like dragons, would get extreminated from civilized lands by people banding up to deal with them pretty quickly unless they were powerful enough to wipe armies on their own (at which point I'd question how human civilization even manages to develop), leaving only fast-breeding weak monsters like goblins, which aren't really more than glorified vermin, and things like vampires and succubi, who can hide among people, taking advantage of the opportunities provided by human cities. Sure, every now and then you'd get a vampire or succubus being exposed and lynched by an angry mob of villagers, but if they're careful they could operate pretty easily without rousing too much suspicion (and even if somebody suspects something, they'd still have to connect the suspicions to the right person). If they manage to work their way to a high enough social position, they'd be almost untouchable, because whose word are you going to rather take: some dirtfarming peasants claiming the lord of the land is a vampire, or the lord himself, who has never given the other nobles any reason to believe he's anything but a respectable and wealthy nobleman?
