how come NFL players don't earn the most when those teams claim to be worth so much more than other teams?

I like the method of trading players in sports with salary caps, unlike MLB which just has the luxury tax. It really brings in the financial strategies required to be a top-tier GM along with scouting talent,team chemistry, and future draft picks and free agency openings. It's an entirely new wrinkle for building a team.

American sports are about profit. That's why crazy numbers aren't thrown around. Any franchise not making a healthy profit will either reduce costs to meet revenue or think/threaten to shift to another venue. Salary caps are another way to keep the power away from the players and in the hands of the owners. But even the owners aren't the top dogs. That's the leagues themselves (NBA, NFL etc). They're the ones actually competing in free market against each other. That's why there's such an emphasis on fairness (through trades and drafts) because the other leagues saw that overall consumer engagement goes down in a league with big dynasties that are basically untouchable (MLB). You want every fan to feel like their team can win the championship in their lifetime.

Another aspect where American sports believe in the free market is deciding ticket prices. They're basically the highest that the market can bear. Seeing a single Giants game can cost as much as an entire season pass for even a team like Arsenal which is ridiculed for gouging fans.

things like yankees moichandise are global but NFL seems to be confined to the USA. it seems baseball players earn more money but NFL teams are worth a shitload more. even basketball players are more famous globally than anyone else.
