So how does that work? Most of the PPV money goes towards the organisers not the TV station. They're certainly not giving out their product for free and I doubt French TV will pay a flat fee.

I've been watching boxing and MMA events most weeks for several years and have never once paid a cent on PPV.

PPV prices are more of a stupidity tax for people that don't realize you can get this stuff for free. It's becoming increasingly easier to find streams and I think PPVs days are numbered.
