Because they make enough to only focus on one full time now. No sane person would want to play football and baseball at the same time now considering how many games are in a baseball season and how physically demanding football is
Probably because schedules have gotten bigger and more emphasis on conditioning between seasons, in the UK it used to be common for athletes to play Football in the winter and Cricket in the summer, now there's pretty much no off season in Football and Cricket players jet off to the Southern Hemisphere and play matches during our winter.

The vast majority of people can't even play one sport on a professional level. It only makes sense that very few it would even be possible to do so.
And it's also just not that rewarding. Lebron could probably have had an nfl career but his legacy will be much better as an nba mount rushmore candidate than a meme like bo jackson.

Many football players quarterbacks usually, have played baseball in high school and/or college but football has more glory and is easier to get into whereas the road to the major leagues is long and you don't make as much money until you go from minor league to majors and even then you don't make much unless you're a star. John Elway was a highly touted baseball prospect but he chose football because he would spend years in the minors before getting called to majors learning how to hit fastballs

Depends on the athlete, AB De Villiers, a cricketer, has no handicap at golf, was the #1 ranked tennis junior in SA and captain of SA schoolboys rugby team. Could have played 4 sports professionally
