How do I follow baseball without watching every game like football?
Follow specific pitchers in your team, watch games where they start.
Or stop being a casual and watch the games daily.
Listen to the radio broadcast if you can't watch for whatever reason. Baseball is perfectly suited for radio play by play. Each play is so easy to describe that there is barely anything lost.

Almost nobody watches every game. I always suggest watching series at a time so you can see how your pitchers perform against the same group of hitters (same goes for your team's hitters against the opposing pitchers). Baseball is a game of trends and sample sizes after all. One series a week (3-4 days in a row) is pretty doable. But there's not really a wrong way to approach this.
For the games you don't watch, just check the box scores. Also MLB is pretty good at putting highlights on Youtube quickly.
