Black belts aren't all the same and jiu jitsu has many aspects to it. Some people learn jiu jitsu just so they are able to survive in a fight, but others learn the attacking aggressive style to it. For instance Conor and Mickey Gall are both brown belts, but if they rolled I'm sure Mickey would tap Conor 10 times out of 10 cause he's made it his bread and butter, whereas Conor's focus on learning jiu jitsu is more a defensive style to be able to either escape and get right back up or stall till time runs out.

Jacare and Maia have mastered all aspects of it, and that's why they can sub most people with relative ease.
