They scout certain organizations, like NAGA for example...I believe that's how Khabib and Mickey Gall got signed. Maybe they hold tournaments you could reasonably go to. I believe RFA functions as a feeder league, and there are probably others. Do some research and see if you can figure out where you need to go to get noticed.

You can also submit audition videos directly to the UFC if you're feeling bold. I'd recommend checking out their website, I'm sure there's contact info somewhere so you can get your questions answered by an actual UFC employee as opposed to a pervert on an anonymous Laotian Albino Shetland pony cross training imageboard.

It's cause the taller you are for your division, the more likely it is that you have to do a harsh cut to make the weight. The harder you cut (ie the more dehydrated you are), the easier it is to get heemed. There are exceptions but generally this is the case.
