I recommend Faster Melee 5.0 - it's Dolphin, but specifically designed for Melee netplay. Just google it and the download link should be in the first thread, the melee ISO will be a bit more of a pain to find because Nintendo takes down listings all the time but it'll still be easy enough to find.

So get your version of dolphin booted up and add your melee iso to your library. Get your controller set up. Once that's handled, right click your melee iso in your library, and click "start netplay" if you want to host. Then a window should open showing the lobby you're hosting, along with a little code you can give out that people can use to connect. It is that easy, no IP fuckery or anything. Also, if you want to connect to someone else's lobby, go to tools > start netplay and you'll have the option to connect or host.

If you need more in depth help, ask anything specific and I can give you a better answer.
