Can anyone seriously claim the universe has a finite size? We claim to know the size of the universe, but we can't even account for most of the matter in it. That's a bold thing to do in my opinion. Also, if the universe is infinite, does that collapse the big bang model?

This only applies to things be know to truly end but we haven't seen a universe end so how can we know. It's merely induction that permits you to conclude the universe will end solely because we see a lot of things do, in fact, have an end. You're applying the general to the specific but the two are not in the same realm of nature.

There's a misconception about the term universe. By definition, everything in existence is part of this universe. On the flip side, since spacetime has no properties in and of itself, it's not useful to talk about a region of the universe where no matter and energy are present. Since we know the expansion of the universe and the distribution of matter early on, we can estimate the size of the universe which contains stuff.
