actually it never really stops
It stops when you want it to stop, anon. That's why some people never stop learning and others don't make it past a mental age of 12

It's a use it or lose it sort of thing. What you should really be worried about (as you get older) is muscle wastage. Most middle-aged people and most seniors don't lift weights and get their leg muscle converted into apidose tissue.
The machinery for absorbing cysteine breaks down along with the machinery for zinc. As you get older, you have to supplement these. Cysteine deficiency leads to massive inflammation which leads to death. Zinc deficiency causes decreased levels of test in the blood (doesn't help people who already have enough zinc).
Most older men would double their test levels if they took a zinc supplement over a period of 6 months.

Not to mention that American wheat flour has been fortified with iron because pregnant women in the 1930s and shit like that.
For a normal healthy person, the amount of fortified iron steps past the point where it might do good to being plan harmful. What happens when iron reacts with oxygen in your bloodstream? Free radical pinball with free lives.
Never, it is always changing.
