Why would I copy the stuff that is already in my textbook? You do actually read the textbook right?
Bump. Actually interested. Write class notes in pen. Much more versatile, especially with a scattered/young professor. LaTeX after the fact is a waste of time imo. Time that can be spent reading the book/doing other book. I prefer notes in my textbook though. I write extensively in my textbooks in the margins/attached pages. My handwritten notes are secondary to those in my textbook. If the lecture is not a topics discussed in the book, then handwriting is obviously superior. Else I have my textbook is open on my desk and I'm scrawling notes during the lecture.

I put my notes from functional analysis in latex, but without any proofs. That way you have the important stuff on about 30 pages. This is more useful if there is a written exam and no big focus on proofs.
I took notes for elementary stochastics in latex simply because the lectures were too boring. Also other people will bother you all the time because they want your notes.

Anything can seem obvious when a textbook or professor who's been teaching it for 20 years says it. Writing it in your own words makes you consciously think about it; you pick up on some subtleties or run into pratfalls in your own thinking that you wouldn't have otherwise.
To answer the OP's question, I take handwritten notes in class because it's much faster and easier to follow a professor who's on a roll. I retype all the main definitions and theorems without proof while studying.
