If you plug your nose a surprisingly large amounts of food taste identical, and even with just 5 flavors that's a lot of possible combinations

There are also some things that don't act directly on your taste buds, such as "spicy", texture and temperature

There is no area of the tongue that tastes a specific flavor, and if there was, bitter would be at the tip of the tongue to help determine if something is poisonous before its halfway down your throat. Temperature, coolness and pungency are the same thing and not a taste.
Numbness and astrigency are not tastes.
Calcium taste, heartyness, and metallicness are unproven and may or may not be a thing.

The same reason we see all the colors when our eyes can only dedect three of the colors. Your brain combines information into a concept that you recognise as being a thing. Chicken soup tastes like a combination of a bunch of smells and salt.

Temperture is not a taste but it changes your perception of how something tastes. The exact same thing will "taste" different if warm or cold for psychological reasons
