How do you know if you'd like working in a field when you won't know until you are almost finished with the degree?

No you look at the job that you went to work and then you look at the requirements to get that job. That's how you know what you want to do. You look at what an electrical engineer does and if you think it's really cool and interesting and you want to learn more about it and participate in the field then you know to major in electrical engineering or something closely related to it in University up to a PhD level. That's how you know you don't pick a college major just because you think it's fun. If that was the case then everybody would be majoring in stupid shit like drawing or dance or something

Well I'm not saying you should completely disregard the job market, but what you say is not always possible. It is extremely hard if not impossible to fully understand what a profession consists of until you go through it. Plus you're not garanteed to get exactly the job you looked up.

The undergraduate degrees tend to cover a pretty wide breadth of topics within a field. For example a biology degree will give you a taste of microbiology, genetics, biochemistry, zoology, etc. Most of these (except zoology) are fields with a lot of opportunities in graduate school and in postdocs. It's not unreasonable to expect that someone would get a good sense of what biology is like and whether they want to do it from their high school classes.
