What are the best non Medical specializations in biology /sci/?
I want to study animals and nature and want to know which route would be the best for that.

It's quite competitive, but there's a fair chance to get a position if you can do stats and mathematical modeling in ecology.

Also: an ecologist can be hired to lab jobs, but physiologist/geneticist won't be hired to field work.
Is there any point in studying evolution besides for the fun of it? I can't imagine that being very useful.

Evolutionary biology won't offer that many jobs, unless your university has a famous evolution / paleontology research group. Or you can make connections and friends in those big, well funded groups.
