STEM are THE fields to be your own boss in. Find some buddies in university and create some minimum viable product to pitch to angel investors or VCs. Capitalists are always on the lookout for startups with good ideas and solid engineering/science backing their strategies. Seriously OP, I'm surprised you asked.
Having said that, it does seem to me that the majority of other engineers I know are happy just working 9-7 for someone else, some other corporation rather than take a small comparative risk and form a startup.
