I prefer to be introduced to the topic in a lecture.
I like to take very, very clean-cut notes.
Read up on what it's used for, then attempt practice problems.
If I really feel a mastery over the topic, I will look up proofs involving the material.

+ research it on the internet and if I really like the topic get a couple of books and read it.
Proofs and practice problems. I get a lot more out of working through something myself than out of reading about it or from lectures.
I don't really consider myself to "get" it until I can feel the entire "shape" of the proof or a problem and know where everything is in it and explain it in plain English, so I kind of demonstrate to myself with the little whiteboard I have in my room.
Colored chalk/markers are also a necessity when doing something even remotely difficult for me.
