Lacks correct expression of a certain protein that has something to do with adding copper, or some manner of pigmentation. Occasionally you'll find a crustacean like that.
Crayfish have it happen too. I found one in Vermont, in a lake way out in the woods with an old dock long abandoned. It was just sitting there under the dock. Then it burrowed into the mud.

Hemocyanin in it's unoxidized state is colorless, and blue in it's oxidized state.
If a lobster is blue, it's blood is still well oxidized. They lose this blue color in oxygen-deprived conditions, or when you cook them as the heat releases the oxygen atoms from the hemocyanin molecules.
That lobster has just been taken out of the water, while the rest have been there for a while.

The exoskeleton is made by hardening the soft, inner tissue. The hemocyanin, amongst many other molecules, winds up in the exoskeleton. If, inside the exoskeleton, oxidized hemocyanin can't shed oxygen atoms or oxygen-containing functional groups, it will remain blue.
The genetic mutation you speak of surely has something to do with a gene that removes or reduces the hemocyanin within the forming exoskeleton.
