The original is very outdated. They make an updated version but as a non med student your better off with online resources for A&P.
If you really want a textbook use Rohen or Netter.

I have the 15th Barnes & Nobel edition from 2010, I'm not sure how much of the science has been updated but I'm hoping it's legitimate because imo it's written in a much more interesting way than the more official modern med school textbooks

It looks like what you have is a fancy reprint of the original. You can use it, just don't expect it to be as accurate or detailed as modern versions.

The new versions are pretty good, but you can't study anatomy from an Atlas (maybe very unique people can), you have to use it as a reference while learning some textbook as well. Obviously a cadaver is the best and you can't reach a high level without one, but that depends on what you want to learn for.
I recommend trying Moore's as a textbook, and any respectable atlas would do (Netter, Gray's, Grant's, Sabotta, etc.). Grant's is probably the best for most subjects.
I've taugh anatomy with dissection since 87. For texts I like Grant's Method but it doesn't have pictures for today's student's and use Moore & _____'s Essential Anatomy though only the first edition was essential and now it is bloated. As for atlas's Grant's Atlas is excellent and Netter sucks!

The chemistry within the first couple pages is horribly out of date.
I think its fun.
Easier than the French books I plan to read.

No.
I find incredibly interesting reading old medical or pre-scientific text, Paracelsus and Lucretius and be very interesting readings, but the kind of study that would come of such text is more close to medical history than actual medicine.
In the case of this book, I find if too recent to be historically interesting, but to old to be an object of serious study.
