I generally avoid talking to them unless it's talking shop. I can count on one hand the number of professors i've had who were actually solid people (as in, I would have a beer with them). Most of them, while decent teachers, wind up being pretty disgusting people if I try to talk with them about non-school related things.

I think I said that primarily because there's this one prof I have in mind. Seemed like a nice enough guy at first, but he's been slowly creeping the shit out of me more and more, and can just be an overall annoying person. Brilliant lecturer, probably one of the best i've had, but a real fucking weirdo outside of class.

This means something entirely different in academia. "Socialising" in academia is 99% talking about work. Most people I know made their connections in their PhD by working with a well respected supervisor. Impress through science -> publish together -> lectureship -> professor

I usually ask questions about the material, either clarifications or related concepts that weren't covered in class. Lately I've been thinking about what I want do my research in so I've been asking about their research or what is a "hot" item to research. They love talking about research because that's what their career is built around.

Junior college was different though. I had an organic chemistry teacher that was a total bro. We would watch funny clips on the internet and he would mess with students in the lab.

To be honest, we know you want an LOR for whatever grad school you're applying too. Also, to really get a conversation going with your professor just ask about their research and its progress (if bio/Chem/sic professor). We like to feel as if our work is worthwhile and its an ego boost for many to have someone interested in their work.
It's usually best to keep it short though, especially with undergrad professors as they teach >400 kids in your subject matter and the names that stand out are the students who score exceptionally well and are engaged in lecture and lab, and if you supplement this with small talk you'll get your LOR

what you discuss with your profs depends on what you want to accomplish with your schooling. if you want to do graduate studies you should get to know as much of your faculty as possible; learn what their research interests are, ask for advice with what you have trouble with in studying, etc. being acquainted with the faculty never hurt anyone, and even if you only plan on doing undergrad, you might learn about career opportunities.
