Why dont function definitions such as f(x,y) = xy use := instead

It's often used in theorems or beginnings of proofs, not really much use using it all the time

it's unfortunate that mathematics has chosen to use

= to denote two quantities having the same value
= to denote an assignment operator
= to denote the output of an operation

fortunately context usually clarifies such ambiguities
