Those are very good questions. Unfortunately, I don't have an answer at this moment.

i know it has to do with the different temperatures. it doesn't instantaneous get to the temperature needed for lift off. the shapes in the burning fuel is like the ones in a welder, and they areas of different temperatures. as for the circles i have no clue.

I'm supposing the color is a result of the fuel mixture not being exactly right at first. If you slow the webm down, you can see that each engine fires in turn. The computer doesn't allow them to come to full thrust until it's satisfied that everything is running normally. The sparky thingy is to burn off any hydrogen that might have leaked and collected under the engine bells.

The circles are thin covers for thrusters that are used when the shuttle is on orbit. I suppose they cover them before launch to prevent critters and debris from getting into them.

Nah. They use what essentially is a gigantic spark plug inside the engine to light it up.

Engines are gradually coming up to pressure. First the sparks start flying, then they start pumping propellant, flame propogates up the (still subsonic) propellant stream, turbopumps speed up, chamber pressures increase, combustion efficiency improves and eventually flow is choked at the nozzle and goes supersonic.

They protect the RCS jets from being fouled by the elements. Florida is a very humid place, you know.
