medium well is the ideal setting for most steaks imo however some high end steaks can be pretty good at rarer levels like file mingeon.
only certain high quality steaks taste good and avoid being rubbery at rarer settings, others should be cooked more thoroughly to enhance flavor and get rid of all rubberiness but no so much that it drys out or loses flavor, though how you cook it also can effect its juicyness, not just how long

Filet is fairly tender which is why it's ok basically raw. Anything tough you want to cook well so it's actually edible.

i have no problem with blood and have eaten rare steak on occasion but i just don't like the texture of it, and the meme of rare meat being juicier is just that; a meme. higher end restaurants with 4*+ chefs are able to make it dry and crunchy on the outside while preserving the juiciness. the best example i have is this one ribeye i ate at a hotel in beaumont texas, shit was the juiciest thing i have ever eaten that wasn't fruit.
