That doesn't make sense, if the matrix was a real system that i exist insid of that has my real body in the real world somewhere beyond this pereception of reality, then theoretically there should be some functional way to remove my mind from this system without killing myself

I did think about it, and there is the possibility that the system was never designed for any mind to be removed from it, which is basically what you're saying. However, that means that there's no actual possibility of escape, which is a horrifying concept if you think about it. Fortunately, none of this is proven and it's entirely just a thought experiment about how to escape the matrix. Would the matrix allow me to have these thoughts if it actually existed though? Wouldn't it be able to regulate my mind in some way to prevent questioning things?
