I could have this one done, with two simple alterations, swapping the watermelon for an armful of mugs and changing the background to white.

Or I could have this one done, changing it from Rei to Asuka, and having Asuka with her eyepatch and in her plugsuit in the same pose as Rei, and with a mug on the windowsill. I could also have the watermelon/mug photo altered to eyepatch plugsuit asuka.
probably white bandage eyepatch for windowsill would be best, but black eyepatch for watermugs.

Asuka is my favourite, but even so the amount of Asukas and other evangelions is getting ridiculous but for some reason that show lends itself real well to mugs.

Yes, all the time. I have my Godot and Kurisu mugs in my fridge right now, I have one of my Asuka mugs right in front of me for tea, I used two others earlier for cooking and I have another Asuka mug in my work vehicle. Sometimes I switch which mug I am using depending on the show I watch, obviously I used my sasha braus mug to watch season two of attack on titan, but me having a mug of a currently airing show is kind of rare.
I guess a new steins gate and evangelion are coming out though.
