I was a huge weeb for a while too. I love anime but being unable to find good stuff anymore makes it unappealing.

I enjoy CYOA they're fun and take up time. Then before I sleep I imagine the adventure that takes place.
I'll just sit here and watch live performances of songs I like. It gives me ~5min of escape at a time.

Japanese light novels are one of my favorite forms of escapism. They're a guilty pleasure of mine. Stuff like isekai 'reincarnated into a fantasy world' for young adults. Wish fulfillment and power fantasies where the protagonist always has some kind of overpowered cheat and a harem of beautiful heroines. I know it's trashy but I love it. I've probably read Mushoku Tensei a dozen times at least, all 24+ volumes. Just writing this post makes me want to go read it again.
The only problem is that there's very little content compared to more visual forms of media like anime and manga since it's so much harder to translate. Right? Compare a few lines of text on each illustrated page to full length written chapters. It takes a lot more time and effort and usually the people doing it are fan translators who "do it for free."
