i don't know how much of your anxiety is actually just boredom (reflecting on how you spend your time, behaving, thinking too much about broad topics without learning anything about them), but the cure for me was just to commit to something that was genuinely hard for me.
when you hear of people constantly looking for a "challenge" they are all people who had crippling anxiety and would go fucking insane if they weren't properly stimulating their brain/body. a lot of people don't get that feeling and aren't motivated to do anything.
with that said, if your anxiety only kicks in when you are in uncomfortable situations (socially for example), just spend more time in those uncomfortable situations. experiment with diet and sleep; if i took naps before leaving my comfort zone i was sharper, if i ate the wrong things i would vomit in social situations and sweat all the time as a kid.

I get over mine by not running away from situations that make me anxious. In the same way that you won't get better at an instrument by not playing it you won't get over anxiety by running away from it.
