I fucking love fried rice. I've always been a chubby kid because of it. I'd have Char Siu fried rice at least once a week.

It gave me something to look forward to after school.
I now make restaurant quality fried rice. Though it doesn't look that good because of my camera, >pic related

Many people don't know this. But I am Risottofag.
I've been working on Risottos for months, trying to get the consistency right.

Risotto is by far my favorite Italian Comfort food.
I always ate a more American style of Spaghetti Bolognese so I don't count it
Osso Bucco being my favorite comfy meal.
The only think that could make it more comfy is having someone I love cook it for me. Sadly I cook for myself.

I've never seen either of these done right outside of the upper Midwest. You grill the burger with cheese in the middle so it mixes with the juices of the meat and is good as fuck.

Nowhere else seems to be able to fry cheese curds correctly either. Even Illinois and Iowa get it wrong, and theyre right next door.

A weird but really good Guatemalan food I found is called rellenitos de platano. Take a plantain, mash it up. Take some black beans, mash it up. Add some cinamon and a bit of sugar, and fry it all up.

I argued with a Mexican friend the other day about what constitutes a Cuban Sandwich.
Having tried a "Torta Cubana" made with milanesa, and Cuban Sandwiches made by off-the-boat Cubans I gotta say; The Cuban way is definitely superior. Having tostones on the side is a plus.

It's a food that you like, that gives you comfort, that makes you feel better when you eat it, not necessarily when you are depressed. Something that reminds you of better times, of happiness, that makes your stomach happy, that you can sit and enjoy anytime it's put in front of you.

For me it's mom's beef stew and dad's chicken soup. My mom would make it nice and thick, tons of potatoes, carrots, onion and thick cut steak. It was peppery and simmered for half a day. Ate it with fresh baked bread and no matter how I was feeling, it was filling, delicious, and something I could eat every day if I could.

The chicken soup on the otherhand was something me and dad began making together a few years ago. tons of chicken, rice, carrots, pepper, seasoned salt, a bit of garlic and parsley, and onions. It was very simple, but again, it's delicious and something I could eat anytime, and since it's so easy I can do it myself these days. Though I haven't made a batch since he died last year. I sure could use a bowl though.

I used to find parmesan unpleasant as a child, so my mum would melt mozzarella pieces into the meal instead so I'd still get the protein or something. Anyway, now I always melt it into that meal and while people usually find it odd I think it works really well.

A chicken burrito from this Muchas Gracias joint right by my college was my big comfort food for ages. But now that I'm transferring it'll be a bit hard to get to.
