You should never begin a plan with hoping that your opponent falls into a trap. In fact: 1 ... e5 then 2. Ndf5 is pretty ugly for black.
I'd consider either the exchange of knights followed by e5, or maybe Ne5 alone is even better? Note that your c knight currently prevents Ndf5 (otherwise exf5 Rxf7 but your knight currently defends the bishop).
Rfe8 is also pretty solid. I'd like to think about g6, to stifle white's knight and light bishop, but it makes you too weak on the dark squares. Your a rook is tied to the defence of a6, meaning that it cannot occupy the c-file (not that your chances there are exemplary since c4 is always likely; but, it's better than being stuck.
Nd4 might be a nice eventual outpost for your f knight. If c4, then you could think about moving it to b4.
Despite white's space and slightly more active pieces, black's position is more coherent. I don't see an immediate threat to your queen. Thus, you should slowly improve your position, get your bishops into the game, trade for any of white's more active pieces.

After that, I don't know. I'd love to play g6, but it makes you so weak on those dark squares. But white's knight on d4 is so strong and g6 would stifle it nicely. If you followed it up with e5, then it would block the diagonal nicely.
I don't know. This position actually feels quite sharp when I was working through some variations, mostly centered on white sacrificing his knight to open that e file. You need to squeeze the life out of it and carry that extra pawn into an endgame.

That looks good, but I may have overlooked something. Your d pawn could end up potentially weak, particularly if white piled on pressure with Ba3. To that end, you'll want to improve your light square bishop allowing Rd8 if necessary to defend the pawn.
Maybe you could think about b5 to force things open at a later date.
