I'd recommend some combat flight sims like DCS or IL2 Cliffs of Dover/Battle of Stalingrad. They might not have the gameplay you're thinking of but personally I find them pretty comfy flying in an early morning/late evening setting.

Black Desert Online has a "life" system where you can do comfy things such as sailing, fishing, trading and so on.
I enjoy the game as well, bit grindy and you'll tire of it eventually but you can always come back. Very good graphics make it very comfy.
