Think of a customer service job where a customer would never think to be rude from the start when interacting with an employee.

There is no such job, regardless of whether it's customer service or not. You could be a police officer, a firefighter, a sergeant, and some people will still be a complete asshat to you for no reason.
The key to interacting with potentially hostile customers/folks is to project as much bored indifference as possible. If I'm responding to a customer issue for one of my cashiers, my shoulders are going down, and I'm going practically zen.
Folks usually don't bother yelling at robots, and even if they do, who cares? It's all protocol.
Why would a customer ever be mean from the start?

Because people are hyper-sensitive, or otherwise looking for give-aways. It's pretty easy to trigger them, especially in America, where we have developed a customer-service culture where everyone expects to be treated like a king/queen, and with an authentic smile, at that.
