The 'official' reason is because they want to use the sound cues to make other drivers aware of them for safety reasons. Since motorcycles are smaller vehicles and aren't as visible.

It's also because they want attention, like "HEY EVERYONE LOOK AT ME! I'M ON A MOTORCYCLE ISN'T THAT COOL!"
