Yes, but you can adapt a novel to anime form without it being basically an animated novel. LoGH was more words than visuals. Of course the visual matter a ton, but the meat of the story is contained in the interactions between all the characters.

Ghost in the Shell. Everything except 'ARISE' and the Live action movie is amazing in my opinion.

I've only really liked FMA:B and Cowboy Bebop.
