chess is popular for the same reason soccer is popular, it's a distillation of all the rules (other than en passant and castling). the board is simple and uniform. knight movement is simpler and you don't have to worry which way you can move without being blocked
the more complicated something is the less of a chance it'll spread
I do wish some of the larger board variants that has bishopxknight, rookxknight hybrids were added to lichess though
