Fried chicken penne
I deep fry chicken then cut it into bite size chunks, boil penne, then put the penne into baking dish followed by tomato sauce, chicken, more penne, more sauce, more chicken then an assload of mozzarella cheese. Then I bake it for 20 (?) Minutes. Can't remember how long but basically until the cheese gets browned.

I'm lazy as fuck and a bachelor so I trend toward one pot dishes. Lately I've been buying pork shoulders (bone in) from the store and letting is braise in a huge stockpot with carrots and onions. Pretty good, if a little fatty, and I get a lot of flavor out of the pork so I dont need to spice it or anything. I can usually eat that for the week, use the leftover stock for soup, and fry up the leftover pork bits into friend rice after im starting to get to the end.

There's a really good book on cooking efficiency, i wish i could remember the name, but it basically focused on taking what ends you had leftover from other meals and extending it into means for future meals, that cooking philosophy has taken me very far as someone who basically never cooked growing up and doesn't have a lot of money.

I make a real good ribeye roast. I'll remove the ribs and pull back the braising cap. Sea salt, peppercorns, minced garlic, rosemary and thyme. Tie the ribs and cap back into place. Give it a nice seer and cook it to medium rare. Slice it thin and I'll finish it with a coat garlic butter with au jus and horseradish on the side. For a side I usually do some grilled asparagus with lemon juice and pepper.

Fettucine Alfredo, but with already made italian fettucine and bertoli garlic alfredo sauce. I try to make it look as best I can with some added parsley flakes, chopped garlic, and some shredded romano with some white wine to finish it off.

My dad taught me about one of his signature dishes, he called it Mexican Surprise.
Basically just take a pound of ground beef and one of those cheap taco seasoning packets, cook the meat up, then mix it with whatever he can find in the house in a stir fry. Onions, corn, rice, carrot, mushrooms, tomatoes, beans, cheese, ect. The recipe is basically different every time he makes it. Sometimes theres not even chips or tacos to put it in so we just eat it out of a bowl.
I've taken the formula and adapted it to fill other niches. For example I made a stir fry with rice, chicken, eggs, and vegetables and drowned it with soy sauce. This was Asian Surprise. Sausage, sauerkraut, carrots and potatoes was Stalag Surprise.
At least 50% of the times that I actually prepare a dish its a surprise stir fry. The other half meat on the grill or generic breakfast items. If any robot wants to practice frying i highly recommend breakfast items like eggs, hashbrowns and bacon. they are pretty hard to fuck up and even burnt bacon tastes good.
Its basic as hell but this got me through bachelordom this far. Anything else i just read a box.

I've only recently (past 4-5 months) evolved into actually using herbs and slicing/mincing my own garlic/onion/ginger/etc. instead of powdered/flakes. I'm only now at the point where I can sorta tell how I can enhance the flavor a certain way with spices and herbs. Still bad at it.

Everybody I know that says this doesn't know shit about cooking and suffers dunning-kruger hard.

Cooking requires minute adjustments all the time because the ingredients you use aren't consistent. You'll have pieces of meat that are a little bigger or smaller than unusual, you'll have one cooktop that works differently than another, you might have better results using a different type of pan, it's being able to adjust recipes to accommodate cheaper/higher quality/in season ingredients, recipes are fucking wrong more often than people that are shit at cooking realise both in terms of meeting your preferences and in terms of just being fundamentally wrong or recipes simply failing to include some steps, stuff like that.

A lot of cooking is outside the kitchen, it's knowing WHERE to get the best & best value ingredients.

Recipes will frequently be made using an electric range or a gas range which have different properties, there's stuff that isn't obvious like people will buy a thin wok to be authentic for their Asian recipes and it literally won't work on their electric cooktop because the wok can't maintain the heat high enough while avoiding the oil smoking due to the lack of power with the range + lack of surface area. This is shit that is not obvious at all, not written down in recipe books, yet if you follow the recipe, you will make this mistake. There's just so many little things like that.

People that say this I write off as shit cooks knowing nothing else simply because I've tried to *perfect* cooking meat, and I mean get them so the inside is barely, barely cooked through but not raw to maximise the juiciness, the outside has a nice sear, while dealing with different sized cuts repeatedly, and people that go "Hurr durr I just follow the recipe" I guarantee you can't get it quite perfect and likely overcook their food or don't get a good sear going.

The best thing I can cook by the way, are perfect well done burgers. I know who sells the best buns in town, I know a butcher that sells me just the right meat, I know just the right weight of meat to put in each patty not quite a 1/3rd pounder not quite a 1/4 pounder, I use the right tools, to allow me to smash the burger down onto a cast iron pan (not a grill!), get those patties wider than the bun and fairly thin, they shrink up to the right size that every bite you have has burger, I top with fresh ground pepper and some salt, I use kraft singles (seriously, I believe in the product, and I have a lot of experience with good cheese), toast those fuckin buns, and I top er off with a good number of fresh local veggies, some bacon I cooked up ahead of time, and some sauce.

Currently I'm doing a variation with sriracha mayo + ghost pepper bacon.

If I'm trying to impress a girl I use prosciutto wrapped chicken breasts, taking care to select relatively thin breasts and batter the hell out of them, but I'm actually better at making burgers.

No real recipe. I used dried porcini and dried mixture of mushrooms I got at a supermarket.
