Because had Sauron realised their real plans, to destroy the ring, instead of using it, there would have been absolutely no hope for the forces of good. To the very end, Sauron was utterly convinced that Aragorn, having come to the gates of Mordor, was bearing the ring and was seeking to usurp its power to himself. Had Gandalf flown the eagles to Mordor, he would either have been tossed off by one of the eagles, seeking to take the ring for itself, been taken by Sauron and his forces, forfeiting the ring for good, or simply have been killed along the way.
The only reason Frodo and Samvais, even with their magic elven cloaks and tiny fucking Hobbit bodies and their natural stealth could get to Mount Doom was because Sauron thought Aragorn had the ring and was utterly fixated on him.

Because Aragorn visited the ring conference thing, became king, defeated Sauron's armies and marched onto the black gate, personally calling Sauron out. It's absolutely what most people would have done and had done before. Sauron couldn't even understand that someone would NOT want power, like the hobbits did. It was utterly incomprehensible for him to even assume they would try to destroy the ring, forsake everything that Sauron and Melkor had held dear.
It's the main motif in the series, power, how it and striving for it corrupts everyone and everything.

Gandalf himself states in the books that the only hope they have is for Sauron to believe that Aragorn has the ring and is rising up to challenge Sauron's and the Ring's power. If Sauron knew about the hobbits sneaking in, as he would know about a bunch of giant magic eagles flying into his realm, they'd all be fucked six ways to sunday.
