Anything is possible with the right programming knowledge. But come on...Xbox One controller is better. So annoying hitting the guide button accidentally when pressing start or back.

Well, it was done with a mario kart wii controller so it can probably done with an xbox controller

Sure. Driving sim games (not generic racing, I mean sim-ass F1 type games) can be played fine with a regular controller and that requires finer input than standard commuter car driving. The one thing it might come up short with is parking though. Parallel parking would probably be a chore without the big ratio/fine adjustment you get from a regular steering wheel.
