Something like this.

Large enough to have a seperate bathroom so you don't have to smell your shit in the same room. Small enough to maneuver anywhere maybe even small enough to park in parking lots instead of on the side of the road. The slide out feature is really nice if youre parked for a while and want more space. Other than that just need a comfy bed and a small desk and laptop and a small fridge to hold drinks and salads and i'm happy.
