Anime characters on average dont look like people period. Often the art style needs alot of realistic detail for it to actually look like real races of people. I have seen it in manga occassioanlly, like in Vagabond the people are clearly japanese, and in Vinland saga they are clearly nordic or whatever, and in himizu likewise clearly japanese. If a manga has a unique art style, then it is essentially unrealistic and forgoes features like slanted eyes or tilt of cranium, big nose ridge or lips or anything we today regard as strong racial features. However the uneducated will say death note characters look white just because they do not have slanted eyes in its art style, and by the characters skin tone assume by default they are the only other kind of race with it, caucasian. However as many people know, anime and manga eye slits and eyeballs are many times larger than any real peoples' so it is essentially a nonsensical association, caucasians have the largest eye slits so these alien like characters look more caucasian. None of these characters have the more typical large western nose, height or frame, or hair, but these factors are ignored because one really isnt thinking deeply about it.

lhickness of lips
this covers up pretty much everything
also the color of skin but you dont even need that to make the race apparent
