The Star Wars EU is pretty expansive. A good place a lot of people recommend you start with is the Thrawn trilogy. There's also the New Jedi Order series that are pretty good. There's a timeline for everything that I can't really remember as it's been a long time since I picked up a Star Wars novel.

Kind of shitty that Disney went and made everything not canon but I guess it had to be done.

Reading fiction is useless.
