Try Squid Girl, Attack on Titan, Ghost in the Shell, Kanon, Serial Experiments Lain, Princess Mononoke, Sound! Euphonium, Azumanga Daioh and One Punch Man. For example.

Just remember it's a very big medium and a few of them don't represent all of them for better or worse. If you drew your conclusions about anime based on Akira it would be very different than if you drew them from Sailor Moon.

Just go with whatever is the animes of the season are and work your way backwards.

Cowboy Bebop and Baccano are essential starter series. After that, move onto some more "experimental" stuff like Mononoke (tv series) and Kino's Journey. After all that, give Evangelion/End of Evangelion a try to ease yourself into more typical anime tropes. Further on, watch some cheesier stuff like Fate/Zero and Hunter x Hunter.

Anime is a slippery slope. You'll start out looking for good action/drama, but by the end of the ride you'll be a jaded piece of shit who only consumes Slice of Life. Once that happens, try out Maid Dragon and Daily Lives of High School Boys. ALTERNATIVELY if you're already a jaded loner and don't mind a bit of melodrama, skip all this and watch Welcome to the NHK.
