To answer the question, blue cheese, especially stilton. Gorgonzola in some cases.

Blue cheese works on its own or with some simple bread (baguette). You can also grill it.

If you're adventurous you can use it instead of mozzarella in Bolognese or pizza, even though it's not a stringy cheese it can be used in cooking.

Overall I'd say it's the most flavourful versatile cheese there is, almost everything else is very limited or bland.
