I mushed up kibble and soft dog food for her, but the problem is after a couple bites it all gets stuck in a big wad on the roof of her mouth and she just sits there and tries to suck it off because its blocking her mouth and she can't eat. I can't find any info about this problem :/

Don't leave the puppy alone pls, hire a dog sitter or have family/friends watch over it. If you don't literally kill the thing by leaving it alone all day you will fuck up its psyche and you will face issues socializing it in the future. Don't do it OP don't do it

When animals are young they suck on the teat and that strengthens the muscles in their mouth and also helps form proper facial structure. They also continue this by eating meat off bones and other things that require more than just gobbling kibble.

Your puppy probably doesn't have the muscle memory to properly swallow with its tounge and just keeps trying to chew. I don't know an easy way to fix it however, maybe chew toys.
