Code geass is a great one
Fullmetal Alchemist. (The original first, not Brotherhood.) It's got an incredible set story, emotional, action packed, and inspirational, without filler episode. Each episode is memorable and the story line is original and in depth with incredible art work.
Evangelion, the movies are good too
One piece is pretty easy to get into, but the first 5-6 episodes are a bit dry

To help you out I'll chart my course with anime thus far.
Cowboy Bebop is really neat, I never finished it all the way through but the soundtrack is transcendent, the animation's nice and cool, characters are fun as hell, and it's got a nice episodic-yet-not overarching plot style that I personally love.
One Punch Man got me actually into anime. It's stupid as fuck but it's also fun and retarded, helps you get a feel for why people like anime (extremely exaggerated animation with good characters and interesting ideas). Plus the fights are fucking Elder God-Tier.
JoJo's Bizarre Adventure was what I moved into next and holy shit it's a fucking RIDE. It's meme'd into oblivion but for good reason: when you get a show about vampires, sunlight breathing energy, ancient gods, mind ghosts with superpowers, and flamboyant posing you kinda gotta embrace the silliness. This show does so in SPADES.
Samurai Champloo is the last show I finished, and it's fucking great. Same guy who did Cowboy Bebop, and it shows in the fights, music, and plot structure. Really comfy too, just journeying with these dumb characters and the shit they go through.

Ergo Proxy and Trigun are pretty interesting and worth checking out.
Planetes. It's proper hard sci-fi. All rules of physics are respected and the Japan Aerospace Exploration Agency worked as technical consultant. And it has interesting characters so you don't even have to be a nerd to enjoy it.

I would highly suggest Fate/Kaleid Liner Prisma Illya as your first anime
