Gurren Lagann if you haven't seen it, I loved Lain, it's really atmospheric but doesn't really have a lot of action. I don't know, you might find it boring, or otherwise just might not be what you're looking for. Space Dandy was good I think, basically the adventures of the cowboy guy that rode a horse in Cowboy Bebop's son.

Going by those criteria I'd say Samurai Champloo, Space Dandy, Ghost in the Shell SAC as someone mentioned is great. Thing to note about Berserk is that it ends unfinished, Death Note is well past 26 eps, Fate series works I guess altho it's a tad linear, Gurren Lagann fits too, it's just pure over the top fun, Lain is great but maybe a bit too much for you to digest, Bungou Stray Dogs fits, Phantom, Zipang (altho also ends unfinished but it's a damn nice trip), Hajime no Ippo: Rising (it's ok to not have seen the predecessors), Hellsing, Black Lagoon, Jormungand, Yukikaze, Katanagatari, Shingeki no Bahamut, Blue Sub no. 6, Michiko to Hatchin, Xam'd, Mardock Scramble, Jojo, Canaan, Dominion.

Finally got around to seeing Slayers here, I wouldn't call it unique, but it's a fun, light hearted ride so far, bit like a mix of HxH and Excel Saga kek.

Watch Now and Then, Here and There. It's pretty unique. Just finished it, it was pretty great. It's the kind of show you can watch in one sitting. Don't be turned off that the MC is a kid.

I've watched through most of Samurai Champloo and that was real fun, and JoJo's is fucking exceptional though it's a bit long. Each season is more or less self-contained though, so you can start at whichever arc you so please. I recommend Stardust Crusaders or Diamond Is Unbreakable because I'm a piece of shit.
